- 2 cups rolled oats
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1 cup milk
- 2 large eggs
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chopped pecans or walnuts
Instructions
- Preheat oven to 350°F (175°C). Grease a baking dish.
- Mix all ingredients except nuts in a large bowl until well combined.
- Pour mixture into the prepared baking dish and sprinkle with chopped nuts.
- Bake for 35-40 minutes until golden and set.
- Serve warm with additional maple syrup or toppings if desired.
Notes
- You can substitute almond milk for regular milk for a dairy-free version.
- Store leftovers in the refrigerator and reheat for a quick breakfast.
