Instructions

- In a small saucepan, mix blueberries, water, and cornstarch. Cook over medium heat, stirring constantly, until thickened and blueberries break down, about 5-7 minutes. Remove from heat and let cool slightly.
- Beat softened cream cheese and sugar until smooth. Add vanilla extract and egg, beating until combined. Spread this mixture over the cooled crust.
- Spoon blueberry mixture evenly over the cream cheese layer. Use a spatula to gently spread and ensure even distribution.
- Bake at 350°F (175°C) for 25-30 minutes until edges are golden and filling is set. Cool completely in the pan, then refrigerate for at least 2 hours before slicing. Serve chilled and enjoy.
