Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, beat eggs and granulated sugar until fluffy. Fold in flour until just combined.
- Spread batter evenly on the prepared baking sheet. Bake for 12-15 minutes until lightly golden.
- While warm, roll the sponge in a clean towel to shape and cool.
- In a mixing bowl, blend softened cream cheese, powdered sugar, and vanilla until smooth.
- Unroll the sponge carefully and spread the cream cheese mixture evenly over the surface.
- Scatter fresh cherries over the filling. Reroll the sponge tightly to form a cake roll.
- Chill for at least 2 hours. Dust with powdered sugar before serving.
