Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, diced
  • 2 celery stalks, sliced
  • 1 large potato, peeled and cubed
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic; sauté until translucent.
  3. Add diced carrots, sliced celery, and cubed potato; cook for 5 minutes.
  4. Pour in vegetable broth, bring to a boil, then reduce heat and simmer until vegetables are tender, about 15 minutes.
  5. Stir in coconut milk and spinach, cook until spinach wilts.
  6. Use an immersion blender to puree the soup until smooth or leave it chunky as preferred.
  7. Season with salt and pepper, serve warm garnished with fresh herbs if desired.
