- 1 pound Italian sausage links, casings removed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (9-ounce) package tortellini
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 (14.5-ounce) can diced tomatoes
- Salt and freshly ground black pepper to taste
- Fresh parsley for garnish
- Grated Parmesan cheese for serving
Instructions
- In a large pot, cook the sausage over medium heat until browned and crumbled. Remove excess fat if necessary.
- Add chopped onion, carrots, and celery to the pot, cooking until vegetables are tender, about 5 minutes.
- Stir in garlic and cook for another minute until fragrant.
- Pour in chicken broth and diced tomatoes, bringing mixture to a boil.
- Reduce heat and add tortellini, cooking until tender, about 5 minutes.
- Season with salt and pepper to taste, and garnish with parsley and Parmesan cheese before serving.
Notes
- Feel free to add spinach or kale for extra greens.
- Use spicy sausage for a kick of heat.
- For a vegetarian version, substitute with plant-based sausage and vegetable broth.
