- 1 pound Italian sausage links, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup grated parmesan cheese
- 2 cups kale or spinach, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced sausage and cook until browned. Remove and set aside.
- In the same pot, sauté chopped onion and minced garlic until fragrant and translucent.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and add cooked sausage back into the pot.
- Simmer for 15 minutes, then stir in parmesan cheese and chopped greens.
- Season with salt and pepper. Serve hot garnished with extra parmesan if desired.
Notes
- For a creamier texture, add a splash of heavy cream before serving.
- Use spicy Italian sausage for a kick of heat.
