- 2 cups cooked leftover turkey, shredded
- 4 cups chicken or turkey broth
- 1 onion, chopped
- 3 carrots, diced
- 3 celery stalks, sliced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, carrots, and celery; sauté until tender, about 5 minutes.
- Stir in garlic and cook for another minute.
- Pour in broth and bring to a boil.
- Reduce heat and add shredded turkey, thyme, rosemary; simmer for 20 minutes.
- Add frozen peas, season with salt and pepper, and cook for 5 more minutes.
- Serve hot garnished with fresh herbs if desired.

- Use leftover cooked turkey for best flavor.
- Add noodles or rice for a heartier version.
