- 1 pound ground Italian sausage or beef
- 1 jar (24 oz) marinara sauce
- 4 cups beef or vegetable broth
- 1 cup chopped onion
- 3 cloves garlic, minced
- 8 oz uncooked pasta (penne or rotini)
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley for garnish
Instructions
- In a slow cooker, add ground meat, onion, garlic, marinara, and broth. Stir well.
- Cover and cook on low for 6-8 hours.
- About 15 minutes before serving, add uncooked pasta to the soup and cook on high or until tender.
- Stir in ricotta and mozzarella cheeses, allowing the cheeses to melt into the soup.
- Serve hot, garnished with basil or parsley.

- You can substitute ground turkey or chicken for a leaner option.
