- 1 pound ground beef or stew beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can kidney beans, drained
- 1 can corn kernels
- 1 can diced tomatoes
- 4 cups beef broth

- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the beef over medium heat until cooked through. Remove excess fat if necessary.
- Add chopped onion and garlic, sauté until translucent.
- Stir in cumin, chili powder, salt, and pepper.
- Add beef broth, kidney beans, corn, and diced tomatoes.
- Bring to a boil, then reduce heat and simmer for 30 minutes to allow flavors to meld.
- Serve hot, garnished with fresh cilantro.

- For a thicker soup, mash some beans before adding or simmer longer.
- You can add diced potatoes or bell peppers for extra texture.
