- 1 pound ground beef
- 4 large potatoes, peeled and sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 cup beef broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- Optional: chopped parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add ground beef, season with salt and pepper, and cook until browned. Drain excess fat and set aside.
- Peel and slice potatoes into thin rounds. Boil for 5 minutes if softer potatoes are desired, or use raw slices.
- Layer half of the sliced potatoes in a greased baking dish. Spread cooked ground beef mixture over the potatoes. Top with remaining potato slices. Pour beef broth evenly over the dish. Sprinkle shredded cheddar cheese on top.
- Cover with foil and bake for 40 minutes. Remove foil and bake an additional 10 minutes or until cheese is melted and bubbly. Broil for 2-3 minutes for a golden top if desired.
Notes
- You can substitute sweet potatoes for regular potatoes for added sweetness and nutrients.
- For extra protein, add cooked bacon, ham, or a layer of cheese.
- This dish reheats well; store leftovers in an airtight container in the refrigerator for up to 3 days.
