Instructions
- Preheat oven to 400°F (200°C).

- Add ground turkey, paprika, thyme, salt, and pepper. Cook until turkey is browned and cooked through.
- In a baking dish, layer sliced sweet potatoes. Top with cooked ground turkey mixture.
- Drizzle with remaining olive oil and cover with foil.
- Bake for 40-45 minutes until sweet potatoes are tender.
- Garnish with chopped fresh parsley before serving.
