Ingredients

  • 12 large pasta shells
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cook pasta shells in salted boiling water until al dente, drain and set aside.
  2. In a skillet, heat olive oil over medium heat, sauté garlic until fragrant, then add chopped spinach and cook until wilted. Remove from heat.
  3. In a bowl, combine ricotta, Parmesan, cooked spinach, Italian herbs, salt, and pepper.
  4. Stuff each shell with the ricotta-spinach mixture and place them in a greased baking dish.
  5. Sprinkle shredded mozzarella on top and bake uncovered for 20-25 minutes until bubbly and golden.

Notes

  • You can add crushed red pepper flakes for some heat.
  • Use fresh spinach for the best flavor.
