- 12 large pasta shells
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Cook pasta shells in salted boiling water until al dente, drain and set aside.
- In a skillet, heat olive oil over medium heat, sauté garlic until fragrant, then add chopped spinach and cook until wilted. Remove from heat.
- In a bowl, combine ricotta, Parmesan, cooked spinach, Italian herbs, salt, and pepper.
- Stuff each shell with the ricotta-spinach mixture and place them in a greased baking dish.
- Sprinkle shredded mozzarella on top and bake uncovered for 20-25 minutes until bubbly and golden.
Notes
- You can add crushed red pepper flakes for some heat.
- Use fresh spinach for the best flavor.
- Serve with a side salad or garlic bread for a complete meal.
