- 4 large carrots, peeled and chopped
- 2 tablespoons olive oil
- 1 teaspoon honey or maple syrup (optional)

Instructions
- Bring a pot of salted water to a boil. Add chopped carrots and cook until tender, about 15 minutes.
- Drain the carrots and transfer to a mixing bowl.
- Add olive oil, honey or maple syrup if using, salt, and pepper.
- Mash the carrots with a fork or potato masher until desired consistency is reached.
- Garnish with chopped fresh parsley and serve warm or chilled.
Notes
- You can add a dash of cinnamon or cumin for extra flavor.
- For a creamier texture, mix in a tablespoon of Greek yogurt or sour cream.
