- 1 pound ground turkey
- 2 large sweet potatoes, cubed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat 1 tablespoon olive oil over medium heat. Add chopped onion and garlic, sauté until fragrant.
- Add ground turkey, cook until browned, seasoning with salt, pepper, paprika, and thyme.
- Meanwhile, toss sweet potato cubes with remaining olive oil, salt, and pepper. Spread on a baking sheet.
- Bake sweet potatoes for 20 minutes until tender.
- Remove from oven, combine with cooked turkey mixture, and transfer to a baking dish.
- Bake all together for an additional 15 minutes until heated through and slightly crispy on top.
- Garnish with fresh parsley before serving.

- You can add diced bell peppers or spinach for extra nutrition.
