Instructions
- Cook 1 cup of rice according to package instructions; rinse thoroughly and use 2 cups of water for fluffy rice. Set aside and keep warm.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced red onion and minced garlic; sauté until fragrant, about 2-3 minutes.
- Add ground beef, breaking it apart with a spatula. Cook until browned and cooked through, about 8-10 minutes. Season with oregano, ground cumin, paprika, salt, and black pepper. Stir to combine and let flavors meld for 2 minutes.
- In a separate skillet, heat a touch of olive oil over medium heat. Add sliced zucchini and sauté until tender and slightly caramelized, about 5-7 minutes. Season lightly with salt and pepper.
- Layer warm rice in bowls. Top with seasoned beef mixture and sautéed zucchini. Sprinkle with crumbled feta and chopped parsley. Serve with lemon wedges for an added citrusy flavor.
