  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon smoked paprika
  • 1 teaspoon garam masala
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 200ml tomato purée
  • 200ml heavy cream
  • Fresh cilantro leaves, for garnish

Instructions

  1. In a mixing bowl, combine yogurt, lemon juice, garlic, ginger, cumin, coriander, turmeric, smoked paprika, garam masala, salt, and pepper. Add the chicken pieces, coating them well. Cover and refrigerate for at least 1 hour.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Remove chicken from marinade, letting excess drip off, and cook until golden brown, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add remaining oil and sauté the chopped onion until translucent. Add garlic and ginger, cooking for another minute. Stir in tomato purée and cook for 5 minutes until thickened.
  4. Return the cooked chicken to the skillet, pour in heavy cream, and stir well. Simmer for 10 minutes to meld flavors and develop a rich, creamy sauce. Adjust seasoning with salt and pepper.
  5. Garnish with fresh cilantro leaves and serve hot with basmati rice or naan bread, optionally with cucumber raita for added freshness.
