Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with a light coating of oil or line it with parchment paper.
- In a large bowl, mash the bananas until smooth. Add Greek yogurt, eggs, honey or maple syrup, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together whole wheat flour, baking soda, cinnamon (if using), and salt. Gradually fold dry ingredients into the wet mixture until just combined.
- Pour batter into the prepared loaf pan and spread evenly. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
