- 4 boneless, skinless chicken breasts
- 4 large potatoes, diced
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the chicken breasts with salt, pepper, paprika, and thyme.
- Heat olive oil in a skillet over medium heat and sear the chicken for 2-3 minutes per side until golden.
- Place diced potatoes in the crockpot, pour in chicken broth, and add minced garlic.
- Lay the seared chicken on top of the potatoes, then sprinkle with Parmesan cheese.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, add a splash of white wine or a splash of lemon juice.
- Use baby potatoes for a more uniform presentation.
