- 1.5 pounds (680g) ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 large egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, parsley, egg, salt, pepper, onion powder, and paprika.
- Mix until well combined.
- Transfer the mixture into a greased loaf pan and shape into a loaf.
- Brush the top with olive oil.
- Bake for 45-50 minutes or until cooked through and golden brown on top.
- Let rest for 10 minutes before slicing and serving.
Notes
- You can add chopped spinach or grated zucchini for added moisture.
- Serve with a side of steamed vegetables or mashed potatoes.
