Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, carrots, and celery. Cook until vegetables are tender, about 5 minutes.
- Stir in garlic and cook for another minute.
- Add zucchini, bell pepper, vegetable broth, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes to allow flavors to meld.
- Serve hot, topped with crispy croutons and fresh herbs if desired.
