  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, chilled and diced
  • 1/4 to 1/2 cup ice water
  • 5 large apples, peeled and sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Instructions

  1. Combine flour and salt in a large bowl. Cut in the chilled butter until mixture resembles coarse crumbs.
  2. Add ice water gradually, mixing until dough comes together. Divide dough in half, form into disks, wrap in plastic, and chill for 30 minutes.
  3. Preheat oven to 425°F (220°C). Roll out one disk on a floured surface to fit a 9-inch pie pan.
  4. Transfer crust to pie dish. Toss sliced apples with sugar, cinnamon, nutmeg, and lemon juice.
  5. Fill the crust with apple mixture. Roll out second disk and place over filling, trimming and crimping edges.
  6. Cut small vent holes on top. Bake for 45-50 minutes until golden brown. Cool before serving.
