- 1 cup water
- 2 tablespoons unsalted butter
- 1 cup all-purpose flour
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon

Instructions
- In a saucepan, bring water and butter to a boil. Remove from heat.
- Add flour all at once, stir vigorously until mixture pulls away from the sides of the pan.
- Transfer dough to a bowl and let cool slightly.
- Mix in eggs one at a time, then add vanilla extract until smooth.
- Preheat air fryer to 375°F (190°C).
- Spoon or pipe dough into bite-sized pieces, place in the air fryer basket, lightly spray with cooking spray.
- Air fry for 8-10 minutes until golden and crispy.
- Mix sugar and cinnamon in a bowl, toss hot churro bites in cinnamon sugar or brush with melted butter and coat.
