  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Optional: crispy bacon bits for extra flavor

Instructions

  1. Bring a large pot of water to a boil. Add peeled and cubed potatoes and cook until tender, about 12-15 minutes. Drain thoroughly and set aside.
  2. In a large mixing bowl, combine sour cream, ranch seasoning mix, and melted butter. Stir until smooth. Fold in shredded cheddar cheese and chopped green onions.
  3. If using raw smoked sausage, sauté slices in a skillet until lightly browned; pre-cooked sausage can be added directly. Mix sausage slices into the potato mixture evenly.
  4. Preheat your oven to 375°F (190°C). Grease a baking dish and spread the potato mixture evenly inside. Top with additional shredded cheese.
  5. Bake uncovered for 20-25 minutes until bubbly and golden brown. Optionally, garnish with crispy bacon bits before serving.
