- 2 pounds large potatoes, peeled and cubed
- 1 pound smoked sausage or smoked sausage recipe, sliced
- 1 packet ranch seasoning mix (about 1 ounce)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons butter
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Optional: crispy bacon bits for extra flavor
Instructions
- Bring a large pot of water to a boil. Add peeled and cubed potatoes and cook until tender, about 12-15 minutes. Drain thoroughly and set aside.
- In a large mixing bowl, combine sour cream, ranch seasoning mix, and melted butter. Stir until smooth. Fold in shredded cheddar cheese and chopped green onions.
- If using raw smoked sausage, sauté slices in a skillet until lightly browned; pre-cooked sausage can be added directly. Mix sausage slices into the potato mixture evenly.
- Preheat your oven to 375°F (190°C). Grease a baking dish and spread the potato mixture evenly inside. Top with additional shredded cheese.
- Bake uncovered for 20-25 minutes until bubbly and golden brown. Optionally, garnish with crispy bacon bits before serving.
Notes
- For a spicier version, add sliced jalapeños or hot sauce.
- You can substitute different cheeses like pepper jack or Monterey Jack.
- Make ahead: assemble casserole and refrigerate; bake before serving.
