Ingredients

- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 8 small flour or corn tortillas
- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; cook until translucent.
- Add ground beef to the skillet, season with salt and pepper, and cook until browned. Drain excess fat.
- Stir in half of the enchilada sauce and simmer for 5 minutes.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Warm tortillas slightly to make them pliable. Spoon beef mixture onto each tortilla, roll up, and place seam-side down in the dish.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Bake uncovered for 20-25 minutes until cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
- Feel free to add diced jalapenos for extra spice.
- You can substitute cheddar with Monterey Jack or a Mexican blend cheese.
- Serve with sour cream, guacamole, or Mexican rice for a complete meal.
