Instructions
- Heat olive oil in a large pot over medium-high heat. Brown beef chunks until caramelized, then drain excess fat.
- Add diced onion and garlic, sauté until translucent.
- Stir in carrots, potatoes, thyme, rosemary, salt, and pepper.
- Pour in beef broth and red wine, bring to a boil.
- Reduce heat to low, cover, and simmer for 2 hours until beef is tender and flavors meld.
- Garnish with fresh parsley before serving.
