  • 8 oz ramen noodles
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • Sesame seeds and chopped green onions for garnish

Instructions

  1. Cook ramen noodles according to package instructions, drain and set aside.
  2. Heat sesame oil in a large skillet or wok over medium-high heat.
  3. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Add garlic and ginger, cook for 1 minute until fragrant.
  5. Stir in bell peppers and broccoli, cook for 3-4 minutes until vegetables are tender-crisp.
  6. Mix soy sauce, honey, and rice vinegar, pour over the stir fry, toss to coat evenly.
  7. Add cooked ramen noodles, toss everything together until well combined and heated through.
