Ingredients
Scale
- 3 cups fresh peaches, peeled and sliced
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Optional: cinnamon or nutmeg for added flavor
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or similar baking dish.
- Combine melted butter and brown sugar in a large mixing bowl. Whisk until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In a separate bowl, sift together flour, baking powder, and salt. Gradually add dry ingredients to wet mixture, folding gently to combine into a uniform batter.
- Gently fold the sliced peaches into the batter, ensuring even distribution without breaking the fruit.
- Pour batter into the prepared baking dish. Smooth the surface with a spatula. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Notes
- Allow the cake to cool completely before slicing for easier serving.
- Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to 4 days.
- For longer storage, freeze wrapped cake for up to 2 months.
- Optionally, top with whipped cream, ice cream, or a drizzle of honey before serving.
