- 4 slices of pumpkin bread
- 3 large eggs
- 1/2 cup milk
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons butter
- 2 ripe bananas, sliced
- 2 tablespoons brown sugar
- Whipped cream for topping
- Powdered sugar for dusting
Instructions
- In a shallow bowl, whisk together eggs, milk, pumpkin puree, vanilla, cinnamon, and nutmeg.
- Dip each bread slice into the mixture, soaking well on both sides.
- Heat butter in a skillet over medium heat. Fry the soaked bread slices until golden brown on each side, about 3-4 minutes per side.
- In a separate pan, sprinkle banana slices with brown sugar and cook until caramelized, about 2-3 minutes.
- Serve the french toast topped with caramelized bananas and whipped cream, and dust with powdered sugar.
Notes
- For a vegan version, substitute eggs with flaxseed meal mixed with water and use plant-based milk.
