- 1 pizza dough (store-bought or homemade)
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 2 cups shredded Gruyere cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons butter
- Salt and black pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat oven to 450°F (232°C).
- Heat olive oil and butter in a skillet over medium heat. Add sliced onions, salt, and pepper. Cook slowly, stirring occasionally, until onions are deep golden and caramelized, about 30 minutes.
- Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a baking sheet or pizza stone.
- Spread caramelized onions evenly over the dough.
- Sprinkle Gruyere and mozzarella cheese on top.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and cheese is bubbly.
- Garnish with fresh thyme. Slice and serve hot.
Notes
- For extra flavor, add a splash of balsamic vinegar during caramelizing.
- Make sure to cook onions slowly to achieve deep caramelization.
- You can prepare the caramelized onions ahead and reheat.
