- 2 cups graham cracker crumbs

- 1 cup sour cream
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- In a large bowl, beat cream cheese with sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Fold in grated carrots, cinnamon, nutmeg, and vanilla extract.
- Pour batter over the crust and bake for 55-60 minutes until set.
- Let cool, then spread sour cream evenly over the top and sprinkle with chopped pecans.
- Refrigerate for at least 4 hours before serving for best results.
