  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups fresh blueberries
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press into the bottom of a baking pan to form the crust.
  2. Bake crust for 10 minutes. Meanwhile, combine blueberries, sugar, and lemon juice in a saucepan over medium heat. Simmer until blueberries burst and mixture thickens, about 10 minutes. Let cool.
  3. In a bowl, beat softened cream cheese with powdered sugar and vanilla until smooth. Spread over the baked crust.
  4. Spread the cooled blueberry filling evenly over the cream cheese layer.
  5. Chill the bars for at least 2 hours before slicing and serving.
