Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, cream of tartar, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Gradually add dry ingredients, mixing until just combined. Fold in chopped apples.
- In a small bowl, mix cinnamon and sugar for coating.
- Shape dough into 1 1/2-inch balls, then roll in cinnamon sugar mixture.
- Place on prepared baking sheet about 2 inches apart.
- Bake for 10-12 minutes until edges are golden brown.
- Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack.
Notes
- Use firm apples like Fuji or Honeycrisp for the best texture.
- For extra flavor, add a pinch of nutmeg or ginger to the cinnamon sugar coating.
