- 1 cup vegetable oil
- 2 cups grated carrots
- 1/2 cup crushed walnuts
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch pan with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, beat eggs with oil until well combined. Add grated carrots and mix.
- Gradually add wet ingredients to dry ingredients, mixing until just combined. Fold in walnuts.
- Pour batter into prepared pan and bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.
- Let cool completely in the pan.
- For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until creamy.
- Spread frosting evenly over cooled cake. Slice into bars and garnish with additional walnuts if desired.
