Ingredients
Scale
- 2 cups of cooked and mashed potatoes
- 1 cup of shredded cheddar cheese
- 1/2 cup of grated Parmesan cheese
- 1/2 cup of all-purpose flour
- 1 large egg
- 2 tablespoons of chopped fresh chives (optional)
- Salt and pepper to taste
- 1 cup of bread crumbs
- Oil for frying (vegetable or canola oil)
Instructions
- Start by making smooth and creamy mashed potatoes. Season with salt and pepper, then set aside to cool slightly.
- In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan, chopped chives (if using), and the egg. Mix until well incorporated.
- Shape the mixture into small, round or oval shapes, about the size of a golf ball. Flatten slightly if desired.
- Carefully dip each shaped potato puff into bread crumbs, ensuring an even coating for a crispy exterior.
- Heat oil in a deep frying pan over medium-high heat. Fry the coated puffs in batches until golden brown and crispy, about 3-4 minutes per batch.
- Drain on paper towels to remove excess oil and serve hot with your favorite dipping sauces.
Notes
- Use cold mashed potatoes for easier shaping and better texture.
- Ensure the oil is hot enough before frying to achieve a crispy exterior.
- Add herbs or spices like paprika or garlic powder for additional flavor.
- For a healthier option, bake at 400°F (200°C) for 20-25 minutes until golden and crispy.
