Instructions
- Ensure mashed potatoes are smooth and creamy. If using leftovers, give them a stir; or boil peeled potatoes until tender, then mash with salt and butter.
- In a large bowl, combine mashed potatoes, Cheddar, Parmesan, parsley, garlic powder, paprika, salt, and pepper. Mix thoroughly.
- Form the mixture into small balls or shapes using about a tablespoon per piece. Place on a parchment-lined baking sheet or set aside for frying.
- Beat eggs in a bowl. Dip each potato shape into beaten eggs, then roll in breadcrumbs. Repeat for extra crunch if desired.
- For frying: heat oil in a deep skillet and fry until golden, about 3-4 minutes. For baking: preheat oven to 400°F (200°C) and bake for 15-20 minutes until crispy and golden.
