- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat. Add chicken and cook until golden brown on both sides, about 6 minutes per side. Remove and set aside.
- In the same skillet, add garlic and sauté until fragrant, about 1 minute.
- Add cherry tomatoes and cook until slightly softened, about 2 minutes.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and sauce thickens.
- Add spinach and cook until wilted. Return chicken to the skillet and spoon sauce over.
- Cook for an additional 5 minutes until chicken is heated through. Serve warm garnished with basil if desired.
Notes
- You can substitute heavy cream with cashew cream for a dairy-free version.
- Serve with garlic bread or over pasta for a complete meal.
