Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent, about 5 minutes.
- Stir in minced garlic and cook for 1 minute.
- Add diced tomatoes, vegetable broth, basil, salt, and pepper.
- Bring to a simmer and cook for 10 minutes to allow flavors to meld.
- Add tortellini to the soup and cook according to package instructions, about 3-5 minutes.
- Serve hot, garnished with fresh basil leaves.
