- 4 boneless, skinless chicken breasts
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes
- 2 cups fresh spinach
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning.
- In a skillet, heat olive oil over medium heat and sear chicken until golden brown on both sides, then transfer to slow cooker.
- In a bowl, whisk together heavy cream, Parmesan cheese, garlic, and red pepper flakes. Pour over chicken in the slow cooker.
- Cook on low for 6 hours or until chicken is tender.
- Add fresh spinach during the last 15 minutes of cooking and stir to wilt.
- Serve hot, garnished with additional Parmesan and herbs if desired.
Notes
- You can substitute heavy cream with Greek yogurt for a lighter version.
- Serve over pasta or rice for a complete meal.
