- 2 pounds beef stew meat, cut into chunks
- 1 can (13.5 oz) coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 bell pepper, sliced
- 2 carrots, sliced
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place beef chunks into the slow cooker.
- Add chopped onion, garlic, curry powder, turmeric, soy sauce, salt, and pepper.
- Pour in coconut milk and add sliced bell peppers and carrots.
- Cover and cook on low for 6-8 hours or high for 4 hours until beef is tender.
- Garnish with chopped cilantro before serving.
Notes
For extra flavor, add a squeeze of lime or a sprinkle of chili flakes. Serve over rice or with crusty bread.
