Ingredients

  • 2 pounds beef stew meat, cut into chunks
  • 1 can (13.5 oz) coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 bell pepper, sliced
  • 2 carrots, sliced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Place beef chunks into the slow cooker.
  2. Add chopped onion, garlic, curry powder, turmeric, soy sauce, salt, and pepper.
  3. Pour in coconut milk and add sliced bell peppers and carrots.
  4. Cover and cook on low for 6-8 hours or high for 4 hours until beef is tender.
  5. Garnish with chopped cilantro before serving.

Notes
