Instructions
- In a large pot, heat olive oil over medium heat. Add diced onions, carrots, and celery; sauté until vegetables are tender, about 5 minutes.
- Add minced garlic and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Add gnocchi and cook according to package instructions, usually about 2-3 minutes, until they float.
- Stir in shredded rotisserie chicken and heavy cream, simmer for 5 minutes to blend flavors.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
