- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 pound cooked chicken breast, shredded
- 4 cups chicken broth
- 1 cup heavy cream
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
- Add minced garlic, diced carrots, and celery; cook until vegetables are tender.
- Stir in shredded chicken and cook for 2 minutes.
- Pour in chicken broth, bring to a simmer, then add heavy cream and Italian seasoning.
- Add gnocchi to the soup and cook according to package instructions, usually 3-5 minutes.
- Stir in fresh spinach until wilted. Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese and fresh herbs.
Notes
- Use shredded cooked chicken or rotisserie chicken for convenience.
- Adjust cream and seasoning to taste for a richer or lighter soup.
- Gnocchi can be cooked separately for a firmer texture if preferred.
