- 1 lb Italian sausage, casings removed
- 1 package (16 oz) potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it apart as it cooks.
- Add diced onion and minced garlic; sauté until translucent and fragrant.
- Pour in chicken broth and bring to a boil. Add gnocchi and cook according to package instructions, about 3-4 minutes.
- Reduce heat to low and stir in heavy cream. Season with salt and pepper.
- Add chopped spinach and cook until wilted, about 2 minutes.
- Serve hot, garnished with fresh basil or parsley.

- Feel free to add diced tomatoes for extra flavor.
- Use chicken sausage for a lighter option.
