- 1 pound Italian sausage links, casings removed
- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (16-ounce) package gnocchi
- 2 cups fresh spinach, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove sausage and set aside.
- In the same pot, add chopped onion and cook until translucent. Add garlic and cook for 1 minute.
- Pour in chicken broth and bring to a boil. Add gnocchi and cook according to package instructions until tender.
- Return sausage to the pot, then stir in heavy cream and Parmesan cheese. Simmer for 5 minutes, seasoning with salt and pepper.
- Add chopped spinach and cook until wilted. Serve hot garnished with extra Parmesan and herbs.
Notes
- Use spicy Italian sausage for added heat.
- For a lighter version, substitute heavy cream with half-and-half.
- Ensure gnocchi is cooked until just tender to prevent sogginess.
