Ingredients

  • 1 pound Italian sausage links, casings removed
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (16-ounce) package gnocchi
  • 2 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove sausage and set aside.
  2. In the same pot, add chopped onion and cook until translucent. Add garlic and cook for 1 minute.
  3. Pour in chicken broth and bring to a boil. Add gnocchi and cook according to package instructions until tender.
  4. Return sausage to the pot, then stir in heavy cream and Parmesan cheese. Simmer for 5 minutes, seasoning with salt and pepper.
  5. Add chopped spinach and cook until wilted. Serve hot garnished with extra Parmesan and herbs.
