- 1 pound Italian sausage
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup whole milk or heavy cream
- 1 (16-ounce) package gnocchi
- 2 cups fresh spinach, chopped
- 1 cup shredded Parmesan cheese
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, sauté diced onion and minced garlic until translucent, about 3 minutes.
- Pour in chicken broth and bring to a boil. Add gnocchi and cook according to package instructions, about 3-4 minutes.
- Reduce heat to low, stir in cooked sausage, milk or heavy cream, and chopped spinach. Simmer for 5 minutes, until heated through.
- Stir in Parmesan cheese, season with salt and pepper, and serve hot garnished with additional cheese and fresh herbs if desired.
Notes
- Adjust the amount of cream for a richer or lighter soup.
- Gnocchi can be substituted with cauliflower rice for a low-carb version.
- Use fresh spinach for best flavor; frozen can be used in a pinch, but drain excess moisture.
