A comforting and creamy Italian sausage gnocchi soup, perfect for cozy evenings. Filled with savory sausage, soft gnocchi, fresh spinach, and melty cheese, this soup is both hearty and easy to prepare.

  • Total Time: 30 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 1 pound Italian sausage
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup whole milk or heavy cream
  • 1 (16-ounce) package gnocchi
  • 2 cups fresh spinach, chopped
  • 1 cup shredded Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté diced onion and minced garlic until translucent, about 3 minutes.
  3. Pour in chicken broth and bring to a boil. Add gnocchi and cook according to package instructions, about 3-4 minutes.
  4. Reduce heat to low, stir in cooked sausage, milk or heavy cream, and chopped spinach. Simmer for 5 minutes, until heated through.
  5. Stir in Parmesan cheese, season with salt and pepper, and serve hot garnished with additional cheese and fresh herbs if desired.

Notes

  • Adjust the amount of cream for a richer or lighter soup.
  • Gnocchi can be substituted with cauliflower rice for a low-carb version.
  • Use fresh spinach for best flavor; frozen can be used in a pinch, but drain excess moisture.
