- 1 lb large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 cups cooked mashed potatoes
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes per side.
- Remove shrimp and set aside.
- In the same skillet, add butter and heavy cream, simmer until slightly thickened, about 3 minutes.
- Return shrimp to the skillet, toss to coat with the sauce, and cook for another minute.
- Serve shrimp over warm mashed potatoes, garnished with chopped parsley.
Notes
- For extra flavor, add a squeeze of lemon juice before serving.
- You can substitute heavy cream with Greek yogurt for a lighter option.
