- 4 boneless, skinless chicken breasts
- 1 pound potatoes, diced
- 4 cloves garlic, minced
- 1 cup grated parmesan cheese
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet and sear chicken on both sides until golden. Transfer to crockpot.
- Add diced potatoes, minced garlic, heavy cream, chicken broth, and parmesan to the crockpot.
- Cover and cook on low for 6-7 hours or until chicken is cooked through and potatoes are tender.
- Shred the chicken slightly, stir to coat in the sauce, and garnish with fresh parsley before serving.
Notes
- For extra flavor, add a sprinkle of additional parmesan cheese on top before serving.
- Serve with steamed vegetables or a side salad for a complete meal.
