- 1 pound Italian sausage
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 package (9 oz) cheese tortellini
- 2 cups fresh spinach
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- In a skillet, brown sausage over medium heat; drain excess fat.
- Add sausage, onion, and garlic to the crockpot.
- Pour in chicken broth and diced tomatoes.
- Cook on low for 4 hours.
- Add tortellini and spinach; cook for another 30 minutes.
- Stir in heavy cream, season with salt and pepper, and serve hot.
Notes
Feel free to add your favorite herbs or substitute spinach with kale for variation. For a spicier kick, include red pepper flakes.
