- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 4 slices bacon, cooked and crumbled
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Place diced potatoes, chopped onion, minced garlic, broth, salt, and pepper into the slow cooker.
- Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
- Mash a portion of the potatoes directly in the cooker for a thicker consistency, or blend some with an immersion blender.
- Stir in heavy cream and butter, then cook for an additional 30 minutes.
- Serve hot, topped with crumbled bacon and chopped green onions.
Notes
For a vegan version, substitute heavy cream with coconut milk and use plant-based bacon. Adjust seasoning to taste.
