- 1 pound ground beef or diced cooked beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups corn kernels
- 2 large potatoes, peeled and diced
- 4 cups beef broth
- 1 cup heavy cream
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, cook the ground beef until browned. Remove excess fat.
- Add chopped onion and minced garlic, sauté until translucent.
- Stir in potatoes, corn, paprika, salt, and pepper.
- Pour in beef broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 20 minutes.
- Stir in heavy cream, cook for an additional 5 minutes.
- Serve hot, garnished with chopped parsley.
Notes
- For extra flavor, add diced smoked sausage or bacon.
- You can substitute heavy cream with half-and-half for a lighter version.
