- 4 large potatoes, diced

- 8 oz smoked sausage, sliced

- 1 tsp paprika

- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread potatoes on a baking sheet and roast for 25-30 minutes until golden and crispy.
- While potatoes cook, cook sausage slices in a skillet over medium heat until browned.
- Remove potatoes from oven, sprinkle with shredded cheese, and return to oven for 3-5 minutes until melted.
- Drizzle ranch dressing over the cheesy potatoes, top with sausage slices, and garnish with parsley before serving.
Notes
- You can substitute the smoked sausage with turkey or chicken sausage for a lighter option.
- For extra flavor, add chopped green onions or jalapeños.
